Here's my output from CGMiner, what does the Diff 1/1 mean?
Is it related to: Connected to stratum.btcguild.com diff 1 with stratum

Is there a way to raise it, and is there any benefit to doing that?
I've noticed on other screen shots that the numbers are higher than mine.

It's set by the pool owner. Eventually hashing speeds will be so fast that the servers won't be able to keep up with a 1 diff, and thus it will need to be increased.

So if I submit a share with diff 1/1 compared to diff 5/1 and it takes me longer to solve the diff 5/1 is the payout proportional?

a share is a share. even if the share solves a block, it's valued the same. most pools are pps or pplns, so if you find one that pays on the weight of the share's value, please let all of us know Wink . The only real 'weighing' done by pools on shares is in regards to age, and not size (i.e. slush's pool places less weight on older shares vs newer shares to combat pool hopping).

diff 1/1 will pay the same as diff 5/1 or diff 10M/1.

diff 5/5 will pay the same as 5 each diff 1/1.
