I just read that we should be mining on stratum.bitcoin.cz   port 3333. How to I check if my GUIMiner is set to the correct server? I'm also using the mining proxy.  Do I have to change anything or was restarting it earlier enough?

the first line in GuiMiner should be the server line

You should be able to tell from the logs what servers you are connecting to. I believe the new ones are 54.x.x.x addresses.
