I'm using Teamviewer to log in to my rigs but the miner console (Claymore) window curiously will not display the pink temp & fan line when logging in this way.

Any ideas?

Load up watttool or GPU-Z. Those will show you temps too.

just use claymore built in tool Smiley
In the calymore folder / Remote manager / EthMan
You need to open a port on your router , and redirect that port number to that computer where ethman is running , after that you can check from your phone , another pc , tablet from everywhere around the word Smiley or just run ethman on you rig , log in with teamviewer and you should see the temps

or just change the quality settings in teamviewer , log in to the pc , click " VIEW " on the top of the screen , quality settings /  little arrow by the quality / custom settings / and set the clolors / quality higher

Claymore will not show you the temp only if you are enabling the onboard , you have to switch off the onboard graphics to show the temp , i am using teamviewer without dummy plugs or monitor and claymore show the temp line
If the problem is in the colours itself then you can disable it from the claymore miner itself with a command you can get it from the readme

If you want something more powerful, you could take a look at Awesome Miner. Then you don't have to do TeamViewer/Remote Desktop anymore as all miners and temperatures are available in a single user interface. It can of course do way more than just displaying remote temperatures, but that's one of the features. It can also display temperatures from remote computers no matter if you run Claymore or something else. You can also do remote GPU overclocking if needed.

Example:

Awesome Miner - Complete solution to manage and monitor mining operations of ASIC, GPU and CPU miners
Optimized Antminer firmware - Increased hashrate, improved power efficiency and more features. For S9, S9i, S9j, T9+, L3+, S17, S17 Pro, S17+, T17, T17+, S19, S19 Pro, S19j, S19j Pro, T19
Up to 200,000 miners | Notifications | Native overclocking | Profit switching | Customizable rules | API | Windows application | Mobile web

I had another problem. The miner wouldn't display the fan speed. You can use Teamviewer and Aida64 Extreme to monitor the rig, that's what I do.

Weirdly enough, none of the above suggestions will work.
I wonder if it's because I'm using modded drivers (having 7 GPUs per board, I had to do the "copy old drivers into new drivers folder"-trick to make it work.

So the only way I can see temps is if I plug in a monitor into the said rigs... which I don't have. My old dummy plugs from 2014 do not fit into the cards either (my dummy plugs are VGA-DVI-I and the cards have DVI-D sockets).

Back to the drawing board. Tongue

EDIT: ordered two HDMI dummy plugs. Best thing I can do I suppose.
