Please wait for the Whitepaper with detailed explanation. The short answer is, there are monetary methods to keep a currency price at a certain level. Escrow? Looks interesting concept, but why is the minimu investment 0.5BTC? Not many people have that kind of amount of btc to risk, so basically you are turning the potential investors away. If you had automated ICO on like a website for example, you could lower the investment limit and have much more investors.
