Also, when staking is triggered through sending PoSToken do we have to repeat this process every other time? Does token age reset to 0 after staking a token?

Every time after you trigger the mint() function, your coinage will be reset to 0.
Then you have to wait at least three more days(greater than the minStakeAge) during which time your coinage will always be 0.  After that, your coinage will be recalculated based on your new balance and you can mine again.

Btw, we just checked your address(https://etherscan.io/token/0xee609fe292128cad03b786dbb9bc2634ccdbe7fc?a=0x877341abeaC8f44ac69BA7c99B1D5D31ce7a11D7), your balance is 76.265753424657534246. It seems that you have already mined some tokens successfully.
