Sorry for the total newb question...

I have some money from a coin called Jewel and 8Bit (both of which are delisted now).

Is there a way to transfer those funds from the exchange to my wallet?

I just downloaded a desktop wallet client called Jaxx, but it only accepts certain coins.

So how do I get any other coin in my possession?

You would need to find the wallet software for Jewel coin and 8Bit coin... install both... create a new wallet, get a receive address, then withdraw from the exchange to the receive address you got from  your software wallet.

But I don't think there are any wallets that have lesser known coins. What to do then?

Also, if a coin has been delisted and closed down, does that mean that all my money in that coin has been lost now and no way of recovery?

There is a strong possibility that once a coin is already delisted (meaning it is not available for trading in any exchange) and the people behind the coin have already deactivated themselves then it can be the end of the road for that coin unless there would be new developers (or new owners just like a basketball team or franchise) coming in to take over the rein of the business.

This is actually one of the many risks when we have invested into a coin which is quite flimsy and there is no reliable team behind it working for its plans as specified in the published roadmap. When a coin could not be found in any exchange anymore then storing can be a waste of time and resources.

Just my humble opinion, anyway, since I am not an expert on anything.

But yeah, if it got delisted, then the shitcoin has probably died and is most likely worthless unless you can find another exchange to send it to so you can dump it.  Seems like 8Bit is still on a couple of exchanges, so try yobit or cryptopia or something... I can't find JEWEL anywhere, but have seen JWL on yobit
