You forget about the fact that the funds for this project were allocated directly from the platform’s budget. Besides, the subscriptions’ system does not suggest to the transformation of a part of the project into a free one.

For some reason I thought, that it will be possible to pay for each video individually. It turns out, if I purchase a subscription, I will immediately receive an access to all premium projects at once?

That is correct, all streams are being recorded and will be saved in a Playlist so you will have the option to watch them later or even download and watch offline.
