Bitcoin is already a lot easier for me to spend (if I have a decent amount); at this point its only the vendors.  I've already bought domains, hosting, and other tech stuff with it.  Just need other fields to start accepting btc!

I want it to be easier to buy Bitcoins. You have to jump through a lot of hurdles.

I buy my ecig liquid from a place called vaporstation and they threw in an extra bottle, presumably for paying with bitcoin. Sellers can save at least 3.5% if not more by accepting BTC, I would imagine.

Although if it was for paying with bitcoin, they should make it more obvious =P

also curious, if eBay/PayPal accepted BTC but maintained the same fee structure, would people use it?

From what I understand, you wouldn't have to pay capital gains tax when using BTC to purchase goods, whereas if you cash out and then spend, you may be liable. So I would say more vendors accepting BTC would encourage spending. Whenever I buy things online, I look to see if I can buy with BTC.

Our community is exploring the viability of opening a coffee shop that accepts digital currency only. Basically it will work with a point of sale system much like this one: http://www.youtube.com/watch?v=o84SfChQ-S8

We were originally only going to accept Goldcoin, but I guess we could consider accepting Bitcoin too!  

most coffee shops don't survive long purely because of costs to run a coffee shop vs price per cup (profitability and value to customer). also adding other factors like near by rivals that have well known flavours which people prefer. i would not yet risk having all the standard factors which can limit business, and then add on another limiting factor such as limiting payment method.

thats like asking starbucks to only accept paypal. imagine the customers walk out of starbucks because they cant just hand over money.

at first i would offer all denominations, but have discounts for people paying in digital cryptocurrency.

you can also give out to FIAT customers Gold coins to the amount of, say 5% or whatever the FIAT value is.. as a loyalty scheme. this makes it a subtle way of introducing them to crypto currency.

EG GLD is 300 per $
if a coffee costs $3 or 855GLD(discount for paying crypto) giving a FIAT paying customer 45GLD (15c) into their wallet (phone App wallet service with QR code) would bring you loyalty and teach them how to pay using crypto.
you can also have a little machine on one of your counters where people can buy GLD to their wallets as a way of buying a weeks worth of coffee before hand and at a discount

I know I'd accept a signficant chunk of my paycheck in bitcoin, and could spend much of it on food, clothing, etc.

(Yes, one could just take the paycheck and spend some of it on bitcoin oneself, but that's an extra step, with extra considerations.)

You missed the biggest motivator PURCHASING POWER PARITY!!!!!!  If I can pay with btc and the price is like 5000 USD per btc that's like a mortgage payment from 1 BTC!!! A lot more people would be using btc to buy things if it were priced high enough.  Hoarding mentality is happening at the moment because of its low price and people not wanting to lose out from potential payout on appreciation

Getting more vendors is the most important thing. Those giftcard sites are a great step forward but so far they seem to be limited to US only.

What if, instead of vendors, we could get grocery delivery startup (like Instacart) to accept Bitcoins?

It's easier to be done (only need to convinced a startup vs multiple vendors) and, yeah, I've heard really good things about Instacart from my friends in SF.
