I don't get it. Jerky/Biltong is meat that has been cut into strips, trimmed of fat and dried or smoked with low heat 40-70 °C (100-160 °F).

Thanks, I can't believe I didn't make the connection. I actually considered making venison jerky like that, but I used a dehydrator instead.
