I would like to buy a dedicated server that has the capability to run the newest version of OpenOffice/Microsoft Office/LibreOffice. I will need the permission to install additional software onto the OS. 24/7 uptime and a so good internet connection that lets me view a YouTube video in 720p is expected. The dedicated server must be at a place that has good internet connectivity with EU countries. I would like to use it for cryptocurrency trading so make sure that such activities are legal in the given country!

Your best bet would be probably Time4vps.eu. They are a lithuanian provider accepting Bitcoin, via Bitpay.
They have really affordable prices, and the VPS price/quality ratio is really good!.



However i hope that you do aknowledge, that using such online service for trading just sounds unnecessary.
You will have to install desktop enviroment and setup VNC server by hand, but this should not be too difficult of a task.

Why would you do that? Even if you can, it won't be that smooth (the process itself).

Recently, I discussed what I want with a friend and I decided to use a dedicated server instead.

I want to install my trading software onto the server and I think I need a dedicated server because this software should be 24/7 online.
I was writing about watching HD YT video because if I can watch a YT video in HD, I can remote manage my trading software as well (I guess).

Well Vultr has this opinion, but it's around 120$ a month. For viewing videos a server is a very bad idea, because of the framerates that an RDP server is able to send to you.
Why do you need an server for this?
