What Rig would you set up to Mine, and Which Coin would you choose? Would you also choose to mine mutiple different coins?

I would mine at hashco.ws or middlecoin (which autotrade for bitcoin)

If don't have a Rig and you want to "invest" $1k into Rig then you will probably never make $1 back by mining.

Given that I would:
1. Use $1k USD to just buy BTC. This is the most profitable option.
2. Use $1k USD to buy ASIC miner, something ready to ship. Not a pre-order! You will definitely make less then option 1, but more then "investing" into Rig. Might be more fun too.
