Thanks for the reply. Was just wondering. Im not going to use this too much. I just watched a ted talk about NSA and how they track people and if a company doesnt comply, they hack them.
What talk was that. You got a link? http://youtu.be/9CqVYUOjHLwThanks. Watching now. It is probably one of the most interesting videos of all time! Well I wouldn't go that far, but it's an interesting video, but nothing I didn’t already know, but it's a good video to show to people who don't. There arent many presentations I get interested into. I only have been really interested in 3 talks. This, "How I held my breath for 17 minutes", and a talk about black holes in a observatory. I've seen a few great talks on there. Seen a few shit ones though as well. My favourite rapper Akala has done a couple. Not sure whether you'd be interested but I recommend them regardless.

Bittorrent Chat seems promising. Its decentralized, so there is no central server where all your conversations stay for anyone to grab. Its still under development though, so we'll see..

This a good software because it does not reach any main server. It only reaches the person you want to talk to.

I am working on a secure communication platform where you connect directly to your intended recipient. Oddly, it was my garage door that inspired me.
It will have many fail-safe features and I will try to make some sort of interception detection. I intend for it to be used over Tor or Freenet, but could even work on the regular internet, and I intend for it to be secure enough to even be able to transmit your messages in plain speaking, over the radio, etc.
Because transmitting encrypted messages over Ham Radio is not allowed by the FCC I will have to think on some legal work arounds.

About 5 years ago I was using SILC but the devs seem to have abandoned the project—which is a shame. It resembled IRC too much for my liking but I'm sure it would have been a success if only they could have made it decentralised.
netcat+SSH+Tor is the quick & dirty option.

no service is 100% secure, but i suggest cryptocat: https://crypto.catit uses otr and works in the browser so it's very easy to use. Dont use cryptocat, its broken. Broken as in they made a billion mistakes, trying to implement otr properly. http://tobtu.com/decryptocat.phpSorry I didnt reply to this earlier, had a lot of stuff to do.

Is there any chat service that is 100% secure, and encrypted chat that no government can track? I have nothing really to hide, but I like the fact that there is something out there that the government cant control. Skype one to one chat (both voice and text) used to be encrypted from end to end, but I am not sure about the current situation after they bought by Microsoft.

BitMail ! it's an open-source decentralized and encrypted email client for the Windows operating system.

Pretty sure NSA has backdoors into it as well.
