So I want to buy 5x 580 Nitro+ 8gb.

How do I start modding them? MSI Afterburner and then a bios flash?
Or what would you guys recommend?

BIOS-Flash, patch AMD driver, apply a common MSI overclock/underclock/undervolt and... boom.
Oh! And dont forget to switch to compute mode.

Every miner has each setting adjusting to their mining rig but must remember the stable rig is better than the speed (hashrate) and when you modding or OC the number of hashrate generated depends on VRAM also hashrate in network depends on Dag file / Size if to mine in Ethash Algo.

- You can do BIOS mod
- You can tweak your memory straps configuration
- You can overclock your clock and shader frequency, but mostly will introduce instability. You really need to find your personal sweet spot.

Every miner usually do mod bios or patch driver and install deiver special blockchain for amd only, if nvidia i do not know. And also do some special settings in miner software, eg command line dcri, asm, etc parameters. But if you want to simple way just add more gpu.

if you are a new miner better don't do Mod Bios or OC because it's a bit complicated. better a normal run first then learn from it.

You must first modify the original Bios of the video cards using Polaris Bios Editor. Be sure to keep the original Bios. You can then play with the settings of MSI Afterburner.

i would recommend to buy vegas instead, they are faster and more energy efficient

Related to your question "How to get more h/s?" and you were using RX series from AMD (as you plan to buy) you will have a few scenarios.

First, OCing and Undervolting using OC tools may enough for a starter.

Second, Bios mod then OCing that you can do after understanding how it works.

Third, For some VRAM type, OC was more than enough (the card can run at the same hashing speed with OCed cards). AFAIK Samsung and Micron can do that.

Yeah, that will break your card warranty. 
Proper way bios mod wouldn't break your card, what that proper way to do bios mod? one of it was always using your original bios as bios source for doing bios mod.
