You are right, the demand of ethereum is still huge and most of projects and ICOs out there are using ethereum platform, so it makes the demand of ethereum big.

My minimum target for 2-3 years of holding is $2,000, so that's instant more than 10 times return if buying at the current price.

Well old coin is not means the coin can be strong in the market but ethereum is a veteran coin indeed and that's why many people use this coin. If you look at the market right now, the price of ethereum is on a good spot and it's been increasing since 2 days ago. I think it's a good sign and if you want for long term, it still good imo.
