The difficulty is functioning like any other PoW system, it'll go up or down as needed in order to have one block mined every 1 minute.

I believe there's room for a couple of projects to be GPU-mined. With Ethereum constantly losing profitability, the fleeting hashrate of GPU miners can put strength in new projects.
