Do you have control of the domain? There are many back links that would break if the domain goes away...getting a dozen mirrors up or migrating the site doesn't fix the back link issue.

Thanks. Most of the technical work was done by others. I do control the domain (via a trustee service -- you need to be in the EU to be the registrant of a .it domain).

This seems to be a server issue... the actual wiki content is correct.
But yes, I agree fixing it should be a priority.
Unfortunately, nobody working on the server has been able to reproduce it yet, so someone here experiencing the issue may need to stop by #bitcoin-wiki (freenode IRC) to help troubleshoot...

How to remove pages of old/nonworking sites or services?

If the site/service had its own page and was of some note, just edit the page and mention that the site no longer exists. I'd suggest to leave the content intact, for the purpose of preserving history.
If you are talking about entries in pages which have a "list of $things", just delete entry from the list.
