Last 2 pics looks like click bait for some media content. As far as things going viral, well sara algorithm ka chakkar hai. Some countries, community are favourite to get some stick and racism is alright against them, india falls into same category.
I've been to Varanasi and have seen the kachori walas you are mentioning here. These kachori walas do not even have a proper kitchen setup. They will make kachoris on road where there will be dust, flies, etc roaming around. Even the oil these kachori walas use is the same for months. They don't even wash the kadhais which creates a thick black layer. We mostly ignore that thinking some hygiene would at least be maintained but to be honest, there is none.
I once got food poisoning when I was in Delhi and was roaming around for chats in daryaganj. That was the moment I stopped eating outside food especially oily food as I don't trust the oil anymore. I would spend way more for the same food but would have it in a good restaurant.
Kashi corridor par toh theek thaak laga hygiene ka hisab kitab. Patli galiyon mein hi jyada panga but problem yeh hi ki khana wahin ka sabse tasty hota hai isliye lambi line lagti hai.
Spent 2.5 years of my school days in daryaganj, literally grew up eating nyari as breakfast in purani delhi ( back then 10-12rs mein do log kha lete they ek plate se). Trick is to avoid fried food in old Delhi, infact everywhere. Ngl with all raid news on restaurants related to adulteration food, now i don't trust em either.
