Yes, $30k is really big just to be invested in one project or coin alone, the best way is to atleast divide it and invest in your top 3 choosen promising coin or project that could be worth more in the future. But the OP doesn't want that, he/she asks what to invest and put that $30k alone in just one choosen project or coin. Ethereum isn't a bad idea but I don't really recommend it to invest the whole sum, so my advice is invest it to either Bitcoin (BTC), Solana (SOL), Cardano (ADA), or Binance Coin (BNB).

With $30k I will divide by 3 with the same portion, $10k I use for staking in Pancake Swap, $10k I use to buy altcoins that have the opportunity to skyrocket, namely BNB, Polygon and Uniswap, and the rest I use to invest in new projects, This is my opinion, as an investor you have to do your own analysis.

I think you should take parts in IDOs. You need to stake big amount of specific coins and then your eligible for participating and they will give you automatically a small amount of the launched coin with initial private sale price..
You can search IDOs on coinmarketcap.
Be cautious because you even if the coin does a huge pump , liquidity is locked with percentages so they cannot rag pull the project
