Anyone have any ideas? Been a few hours now...

Bitcoin Core v22.0.0 - 70016/Satoshi:22.0.0/

Are you sure that you are using tor v3? Because this latest version of Bitcoin core only removes support for Tor version 2.
You can read the releases not here https://github.com/bitcoin/bitcoin/blob/master/doc/release-notes/release-notes-22.0.md#p2p-and-network-changes

Much better if you could share the debug.log so that we could have much insight into your problem.

Thanks! I connected to a few more v3 peers and after about 6 hours started getting incoming v3 peers. I think I must've been relying on v2 in earlier versions so my v3 were lacking to start.

All good now.
