I have worked at different jobs and I can conclude that the level of stress and many other positive or negative aspects primarily depend on the people with whom you have to work.

I quite understand you on this, there is not type of work that is as easy as reciting A,B,CD... There is some level of commitment and stress which obviously differs but more of the pressure is offline.
As you have noted that it also depends on your working relationship with your boss. But then there are also other types of stresses which can be,

2. Distraction at work place by colleagues
3. To task of always dressing corporately even against your desire.
