When you can create something in a short time with better results, why would you want to choose another, more difficult way? This isn't about laziness, but about intelligence in utilizing something.
There are simply no guarantees that the result will be better. Besides, the argument of why go the harder way if there is an easy one is not all that obvious. It is like the question of why read books if there are movies, TV series, YouTube. But after all, this is a completely different experience! These are all things that are difficult to achieve with the quick results we get from AI.
