As far as my observation is concerned, the reason why winning early doesn't make gamblers stop is that they've just started playing, it's still too early to stop, the fun is still there, there's nothing else to do. Of course, there's also the mindset that it's going to be a lucky day and there's still much to win.

I've had gambling sessions which started really good. But should I go home right away after just less than an hour of betting? Less likely, especially if you're with a group. I also came to the conclusion that if you are playing with one strategy, you shouldn’t change the size of your stake. I can, but this would depends from person to person, I mean, people will have different reaction when they win early in their gambling session, some will just continue as it is, some might cut their gambling session early to not lose more of their winnings, and some will become greedy(as you mentioned) and think that they'd be able to win again and end up losing his initial winnings and then his funds too.
