One thing I personally do is always cash back some money when winning, so even if I keep gambling I don't end up with nothing in the end. Just cash back the deposit at the very least when you are winning good.

It's no rocket science but just emotions. People gamble with their emotions being involved and that is why they get carried away.

Greed is one problem that we need to make sure that we fix it and there is no way we canbe inhibited because greed is already part of us. There are gamblers that are doing too much just for them to make money from gambling.

That's how greed blinds us when gambling for profit, thinking maybe I'm lucky or I'm reaching a higher win, it's always like that and that's the greed we have, I once stopped when I got a big win that I got even though it was not as big as most people but it was quite big if the capital was only $50 to get $1k.

There is no easy way to explain this thing. I think it is the dopamine that takes control of our brains when gambling. People gamble for a long time until they realise how messed up they are. The time of realisation is after the gambler is completely out of bankroll. Which means he has lost everything he came with into the game. The simple answer to the question you just ask is "Greed" and likewise the quest of wanting to "Get Rich Quick" overnight by over zealous gamblers. Forgetting the fact that in gambling, you stand a 50/50% chance of either winning or losing each bet that is been made,  and in a situation whereby you are privileged to win a huge sum of money the first round, the best action should be to take a break, knowing fully well that you can never always beat the casino in terms of long term profit. But it's sad for some that  instead of quitting, they will then start acting as if it's their lucky day to keep gambling further, until they might eventually exhaust their capital and everything that was won, that's the only moment they will realize their self. Those who already won don't quit instantly, possibly because of  the following reason:

1.  They have a winning amount target goal, and the winnings have yet to reach the goal.  This happened to me several times. I have my session winnings, but due to having a target winnings, I still continue to play, despite getting a reasonable amount of wins (2x-3x) in proportion to my initial bankroll, since my target is at least 4x.

2.  Greed, we cannot deny, when greed hits the gambler, there is no amount of winnings that is enough for the gambler to be satisfied.

Overconfident in gambling is not good at all because the gambling is already built to favour the house edge the most, the moment one decides to do otherwise in gambling, it will turn back  to be what will control the person and maybe, if they weal to not control their emotions, they will fall a victim of mental illness and will also affect their bankroll.
