If these 2 clubs play 10 matches PSG will win most most of the matches and they will loose less, there for if you bet them to win always on similar matches because you know they are better, (exclude emotions) do you know you will be winning long term gambling. Now arsenal will win sometimes in those 10 matches, but not most of the times, and your target in betting should be most of the Times.

Some time we let emotions do the gamble, we refuse to be strategic and that is what might be holding some spots bettors back. In the club world cup Chelsea won against PSG. But I placed the bet for PSG to win regardless of Chelsea being my club. I knew that out of numbers of matches PSG will win more so I choose to bet on them, but I lost the bet and it fine at least I was honest with my self.

Before this year's Chelsea knockout by PSG, they were evenly matched. 3 wins, 3 draws and 3 losses. But with this year's knockout, it's 5 wins for PSG.

For Arsenal: They both are evenly matched right now. 2 wins, 4 draws, and 2 losses (these stats include friendlies). So you see, your claim of having PSG dominate when pitched against Arsenal in 10 matches is not entirely true historically.

Before generalizing it, you must also know that it's not all gamblers judge from just one perspective, every gambler has their ways of doing analysis before placing a bet why there are also those who just do their analysis the way you are talking about, they don't stress to check if there have been a significant change in the team and they will just bet on the team to win the next match. You don't need to be biased when you are betting if not, it will definitely affect your picks. What I do is to always bet on the strongest club but sometimes, it doesn't go down that way. I know several times that I bet on a team that I feel is stronger and ended up in losses. This is why doubt comes.

It was clear that at the start of the match in the 6th minute Arsenal had scored the first goal, there the facts had proven and believed that Arsenal would win the match, many people no longer wanted to change their bets, their beliefs and thoughts would not change for anything else.

Even though PSG scored a goal in the 65th minute, it wouldn't shake the delusions of Arsenal fans, there was still time at least gamblers were hoping for 1-2 but that's the match the facts said otherwise, 1-1 the match finished.

To address the reality, winning doesn't matter in sports betting, you can lose 8 out of 10 games but turned out to win the remaining 2 games to be more profitable because they had odds like 26.0 and 48.0. FOMO is actually one of the biggest reason so many gamblers abandon their plans and make very poor decisions. The problem is that so many people actually fear missing the chance to win more than they fear lose their money in gambling and thats why so many of us  chase games that we feel are sure games picking teams that has 100 percent chance of winning. To be frankly speaking, don't forget that in Sports betting, nothing is ever guaranteed. And for that reason, despite the fact that some gamblers might be presented with all logical facts to proof that a team has more chances of winning over the other, been a fan of a club is another factor that makes gamblers to stick to placing a bet over the victory of their favorite club, rather than following the already logical statistics which proves otherwise. I could imagine the feeling, although these only happen to those gamblers who believe that there research isn't enough or lacking confident. I'm sure that those that have confident in what they do will just bet exactly what they get from their research. For me I don't see reasons why we should be disturbing ourselves in trying to figure out if it is like this or the other way, I do what my instinct tells me to do without even thinking twice that's if I don't want to make analysis.
