But what exactly would that utility be nowadays? Platforms with some kind of smart contract API are already designed to build arbitrary utility on the top of them. This kills off many opportunities that existed before to add innovative utility features.

If you are talking about mining cryptocurrencies on your own device, the best options would be Ravencoin (RVN), Vertcoin (VTC), and Monero (XMR). However, since mining is no longer a hot topic, do not expect to find much interest in these coins; the current trend is memecoins and investments that bump within less than 24 hours.
I guess mining lost its spark, due to shrinking profitability, since big factors on that is the electricity cost goes up and that eats a lot in their operation. There are also other factor affects it and this is the reason many people shift their interest on something they can easy to handle. Honestly the real utility ended up in stablecoins, like mu_enrico said. Most "utility" tokens were just a ticket into one app, and people would rather pay in USDC anyway

I miss the utility narrative too, but a label alone is not enough; the product has to keep shipping and create a reason to hold the asset. For any early public access I use a fixed checklist for distribution, liquidity and unlocks, and avoid the 24-hour hype cycle. TokenKickstarter is one place I have checked while mapping newer projects, then I verify the contracts and vesting myself. NFA.

For what I know, there are still areas where electricity is dirt-cheap. People living in such areas, will continue to mine PoW cryptocurrencies for profit. Given that most altcoins are switching to PoS, there's a high probability Bitcoin will remain the sole PoW crypto in the future. I have to admit that utility coins are becoming scarcer each day. Everything's speculative right now. Things could change if more serious investors join the craze. With "Wall Street" now in the game, there's hope crypto will shift from being purely-speculative to being more utilitarian-driven. Only "meme" coins will remain speculative investments due to the way they're designed. The market changes quickly, so anything can be expected. In meantime, I'd suggest you "stick" with good-old cryptocurrencies such as Bitcoin, Litecoin, and Monero. They're most likely to last a lifetime.

If you already have mining stuff, go try some of them, plenty of them are discussed in mining communities. But if you are planning to manage a mining farm from scratch, you better choose one of the already existing projects. I see monero still enjoyable for solo mining but you have to deal with exchange platforms since most of them delist privacy coins. Also litecoin is a still a profitable coin. Good luck
People like us who lack the capital don't even think of setting up a mining farm. I personally just prefer leveraging on high volume utility coins and as of recently, my personal favorites are Xrp,Hbar and Arb on a daily trading. I switch in between them because they are far easier to trade on futures and mostly I usually go long on them. I hardly short the market. I somehow find a strong connection to them because I was seriously backtesting and observing them during the heavy downtrend of the market and I noticed how they were bouncing back and surviving the worst market conditions and that gave me the confidence I needed to trade their volatile contracts.

Despite I believe trading in daily basis is an unproductive activity, I would prefer it instead of mining unknown coins from new projects. However with proven utility coins, I prefer investing in some mining stuff. So if I have to chose between all of those choices, I would prefer mining utility coins than trading in high volume cryptocurrencies. Looking at the mining industry today, it is so different from old days. Solo mining becomes less profitable with the majority of cryptocurrencies. Their last chance is in new projects which none of them is a utility. I guess all of them have migrated to trading instead of betting on those new projects.

In reality, there are very few coins that actually have a real purpose other than trading. If you have a mining ASIC and are skilled at it then don't think about anything new and stick with the previous coins. But for me, it is important to first have the product and user demand, then the token because if there are no real users and demand, the word utility alone does not make a coin truly useful and for mining, the profit calculation comes first because it has to consider the cost of electricity bills, hardware costs, maintenance costs and time. What real purpose is that? All i see are meta purposes. And if by "demand" and "other then trading" you mean buying something with it, i consider that basically trading as well, as you are trading it with something. And in most cases you are going to trade it to fiat money when buying something anyway. It's just happening without you knowing about it, by third party services. Every project is as "real", imho if they are open source.

I believe a better question for a utility coin is if the utility's price dropped to zero would it still have consumers. If all they are doing is using the platform expecting some sort of value to increase in the token, then the utility is likely low. There are potential opportunities to do this with AI, but the product needs to address a problem that people have and the token needs to play a legitimate part in solving that problem. Otherwise, the addition of 'AI' is not very helpful. I'd rather be interested in a small project with real users, rather than a popular coin with thousands of use cases promised.

Well! There are almost no more new useful decentralize projects any more that can be trusted of lasting the test of time and as well as are delivering real world utility. If this could be anything to go by then I know of Akash network, a marketplace where computing operators do earn reward for service provided to users. I am sorry op but, mine my coin/token and use it to pay for services, doesn't look like much utility to me. One may argue Bitcoin does same, but it was unprecedentedly original. I don't think today's meta is different from many years ago; even today, I don't see any useful "utility coins" except those that are used for stablecoin transactions (yes, nowadays stablecoins are the norm), like ETH, BNB, Base, Arbitrum, Polygon, and Avalanche. All of them are just for paying gas for stablecoin transactions. Out of all those coins mentioned, Ethereum is in league of it's own, rest are it's copycats or owe it's existence to it. Whether people like it or not — Ethereum with it's smart-contracts feature is a big deal; I am still looking for something that has same level of impact as Ethereum in crypto industry. On relevant note, I also like what Uniswap did to decentralized exchanges sphere, it was significant upgrade from dexes like Etherdelta (not much fan of $UNI but fan of standalone project).
