These days I've been getting into making my own pizza.  Not a fan of the pizza chains these days, and all the small pizza shops pretty much suck that are close by.

I have found a great pizza crust that I can buy at a local store.  I'm not fan of regular pizza sauce so I end up using Bulls Eye BBQ sauce  I cook up some maple bacon to use as bacon bits and then cook some boneless chicken breast in some of the bacon grease and raw chopped up garlic to add flavor. I let it cool a bit and then cut it into pieces.

I buy some quality pizza mozzarella and use that for the bottom after the sauce.  I then use some thick sliced ham cut into pieces for the first topping. I'll use the chicken next and then put on a second layer of cheese.

Lastly, I'll crumble the bacon chunks on top and sprinkle a little Parmesan cheese on the top.

Well, i like to make a stack of waffles and put some Nutella on them. Deliciousness served!!!! If not, i always make myself a tea and drink it watching tv.

Right now, I'm cooking some Fettuccine Alfredo con Pollo. My mother's recipe for Alfredo sauce simply cannot be beat! Fixing some bread and olive pesto and a nice fresh salad as well. This is what I like to cook. Smiley

What is Texas red? I googled it and the results were not food related. If I were to guess, I'd say you were talking about chili. But I'm not sure.

Cuz it summer time soon and really hot I dont want to spend to many time in kitchen so i try to make fast food (bot burgers and stuff)

Something that is good but eatable like rise with some vegetables and little bit of chicken meat or some chicken soup even cooked fish with potato salad.

Best thing George Foreman grill makes great toasties. Butter both sides put in 2 cheese slices then add :
1. Thinly sliced honey roast ham
2. Marmite
3. Sliced tomato
4. Pickled jalapeños
5. Tuna with mayo
6. Or any combination of the above

I usually stick to 1. and serve with a nice big mug of tea.

TODAY I AM TRYING TO MAKE THIS FOR MY SELF HOPE IT WILL BE FINE

FISH FRY

(Meen Varuval, Meen Porichathu, Grilled Fish, Broiled Fish)
Ingredients
Fish Pieces - 1 lb (1/2 kg)
Red Chilly Powder - 3 tsp
Corriander Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Pepper Powder - 1/2 tsp
Garlic Powder - 1/2 tsp (or use 1/2 tsp Ginger Garlic Paste)
Curry Leaves - 1 spring (chopped)
Lemon Juice - 1 tsp
Salt - 1 tsp
Oil - for frying

Method
1. Wash the fish thoroughly and cut it into pieces.
2. Mix the chilly powder, corriander powder, pepper powder, turmeric powder, chopped curry leaves,  garlic powder and salt in a bowl.
3. Add the lemon juice and make a smooth spice paste.
4. Apply this paste over the fish pieces. Let it marinate for 10-15 minutes.
5. Shallow fry the pieces till both sides are brown and crispy (about 2-3 minutes on each side).
6. Serve with rice and some curry or serve as an appetizer.

i like the asian cuisine.

so chicken breast with some ginger, lemon grass, soy sauce. maybe a lil bit of coconut milk

you can do many different kind of styles and easily mix your own curry pastes etc.

I figured I'd try something new last night on the BBQ.

You take boneless, skinless chicken breast filets and flatten them out a bit.  I chopped up some jalapeno, and mixed it in with some creme cheese.  Put a ball of the mixture in the middle of the chicken breast.  Wrapped them up and then wrapped them in bacon with some toothpicks to keep them together.

They can be a bit of a pain on the BBQ, but if you keep any eye on them, it's not all that bad.

Low heat is the key to cook the chicken without burning the bacon.  After some trial and error with a a few, I found that using the top warming wrack to crisp the bacon a bit worked good without over cooking the chicken.

ok i say goodbye to summer here in my country but i still not in the mood to cook so much because i am the only person here in my house  Roll Eyes husband is away so i can only cook a dish for one person so it could be instant or a 10 mins food  Grin

today I am trying to make chicken tandoori for lunch hope everything will be fine at the time of eating

TANDOORI CHICKEN

INGREDIENTS
3 Tbsp vegetable oil
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon cayenne
1 Tbsp garam masala
1 Tbsp sweet (not hot) paprika
1 cup plain yogurt
2 Tbsp lemon juice
4 minced garlic cloves
2 Tbsp minced fresh ginger
1 teaspoon salt
4 whole chicken legs (drumsticks and thighs), or its equivalent, skinless, bone-in

METHOD

1 Heat the oil in a small pan over medium heat, then cook the coriander, cumin, turmeric, cayenne, garam masala and paprika, stirring often, until fragrant (approximately 2-3 minutes). Let cool completely.

2 Whisk in the cooled spice-oil mixture into the yogurt, then mix in the lemon juice, garlic, salt and ginger.

3 Cut deep slashes (to the bone) in 3-4 places on the leg/thigh pieces. Just make 2-3 cuts if you are using separate drumsticks and thighs. Coat the chicken in the marinade, cover and chill for at least an hour (preferably 6 hours), no more than 8 hours.

4 Prepare your grill so that one side is quite hot over direct heat, the other side cooler, not over direct heat. If using charcoal, leave one side of the grill without coals, so you have a hot side and a cooler side. If you are using a gas grill, just turn on one-half of the burners. Use tongs to wipe the grill grates with a paper towel soaked in vegetable oil. Take the chicken out of the marinade and shake off the excess. You want the chicken coated, but not gloppy. Put the chicken pieces on the hot side of the grill and cover. Cook 2-3 minutes before checking.

5 Turn the chicken so it is brown (even a little bit charred) on all sides, then move it to the cool side of the grill. Cover and cook for at least 20 minutes, up to 40 minutes (or longer) depending on the size of the chicken and the temperature of the grill. The chicken is done when its juices run clear.

Let it rest for at least 5 minutes before serving. It’s also great at room temperature or even cold the next day.
