Also - would you please take a look at FujiCoin-2.0 : Fujisan coin/Fuji-Yama coin/Mt. Fuji coin [FJC] for possible addition to your exchange?

For the fees, at starting we give a long time for free ( approximate 6 months). after that we will take 0.1% of fees and never raise it up.

I'm afraid that i cannot add Stellar at this momment just because the exchange doesn't support Stellar's API yet.
