is it safe to hold btc long term in bitstamp? They seem quite professional.

Holding BTC now is good thing, but i dont think before middle of next year we wont see price change

The main reason for all these dips because these new big late adaptors want miners coins so much while they don't have enough to pair the market. Making something like this is their only way. As soon as they have enough, they will fill the gap

Nope never hold your BTC with any 3rd party long term, i wasn't great technically at understanding things so what i did was just used a spare laptop and bitcoin QT which never touches the internet.  Also have several backup flash drives stored in various places and password protection on the wallet.
