Hello, and welcome to the forum! Bitcoin is a relatively easy to implement payment method, as you can choose to either do everything in-house or use a service provider such as Coinbase or Bitpay to handle the tricky stuff.

Well good luck hosting with OVH!
I've blocked large ranges of their network from the mailservers under my control because they (or their customers) are hosting e-mail spammers and don't seem too eager to drop them, so we're refusing connections from their IP ranges to keep the spam out of our inboxes.
For other kinds of services they're probably good though.

It is indeed very easy to take bitcoin payment now.
You could simply use bitpay or coinbase to take bitcoin payments from your clients, and those sites will exchange the bitcoin to fiat money right away for you.

Welcome! There are several ways to offer Bitcoin as a payment method. You can make use of a merchant service like Bitpay, for example. There are other players in this area too.

Welcome! You can consider using services like Bitpay rather than implementing bitcoin payment by yourself. It's faster and safer.
