I think ppl can convert bitcoin to fiat easily without paying high premium.

You really do not have that long of a trading history, so it would really not be a good idea for anyone to use your services without escrow. Plus bill that is paid in this way will offer reversible payment methods so even if escrow is used there is a good chance that the bill payments will get reversed.
