Think of the blockchain as the ledger for the entire bitcoin network.

Do you mean blockchain.info? It is an online wallet that let you backup your private keys. While multibit is a desktop wallet that does not need you to download all the blockchain.

How is this difficult at all? In my experience, MultiBit is the simplest wallet I've tried till date; for installation as well as usage.

Yep exactly - you can download directly from here(for Windows): https://multibit.org/releases/multibit-0.5.18/multibit-0.5.18-windows-setup.exe
then just install like standard program.

There are many wallets available
but MultiBit is a great light-weight wallet perfect for casual shoppers

You don't need it, but it would be a great alternative for the bandwidth/space-heavy QT version

but if you don't have to, then blockchain.info would be alright

Online wallets are fine for getting started in bitcoin.  However, ever bitcoiner, imo, should eventually reach the maturity where they learn what a wallet is, what private keys are and how to manage them for themselves.  There have been nearly countless robberies and scams and hacks and whatnot that have befallen even the most trusted of online wallet companies.  Remember inputs.io, the wonderful site that let you make instantaneous offchain transactions?  It was so useful and trustworthy that hundreds of people simple left their bitcoins in their inputs.io accounts (I'm sure because it was easier than managing your own wallet and whatnot).  However, one day that company also just up and died and gobbled up everyones money who left it there.

These are some of the reasons why you should eventually learn to use your own wallet program.  And seriously, multibit is just a java file.  It runs on every platform (I use it on gnu/linux without an issue).  Why is so hard for you to run it?  I just do:

$ java -jar Multibit_exe.jar

wallets that you install on your pc like "bitcoin-qt" need the blockchain which is a huge file (more than 20GB) but there are wallets called "light" which don't need the whole blockchin and connect to a server and only download the "headers" which can be as big as 30 MB

Yup you can just keep using blockchain.info as your wallet. As long as your computer isn't infected with malware and you have enabled 2FA, your bitcoin is fairly safe.

if you already have a wallet at blockchain.info, you can keep it and use it for your daily transactions.

you can also have a wallet using multibit on your pc (much safer than an online wallet) to keep more coins.

If you already have coins in your blockchain wallet, you can transfer them to your multibit by sending them to your address.

You can have as many wallets you want. And you can have as many addresses you want. Many people use different address for every single transaction. It's up to you.
