There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, which will follow the rules of the network no matter what miners do. Even if every miner decided to create 1000 bitcoins per block, full nodes would stick to the rules and reject those blocks.

Question: does Bitpay support all other publicly traded cryptocurrencies?

I ask because it said: BitPay currently supports nine currencies:

AUD – Australian Dollars
BTC – Bitcoin
CAD – Canadian Dollars
EUR – Euros
GBP – Pounds Sterling
MXN – Mexican Pesos
NZD – New Zealand Dollar
USD – US Dollars
ZAR – South African Rand

and I thought it would be crudely odd to accept USD and the fiat bunch but not any other CC.
