Yeah, with 2FA and encryption you should be fine with holding a small amount of Bitcoin with Coinbase. However, if you're planning on holding for the long term I'd suggest using a cold storage device such as the Trezor or a paper wallet.

Yep, that's the easiest way to prevent yourself from being scammed. I as well as many others, provide escrow services for free so there's no excuse for not using one.

Do you currently have an IRC channel? I'd like to join and do some verification before I release the Bitcoin held in escrow, to the developer.

Unfortunately, this is a growing problem most likely caused by accounts being sold.
