The message signing process is only to prove you own a certain bitcoin address.
You will want to sign the message right after you send payment. Once payment is sent, copy the bitcoin address you sent the payment from and copy the transaction ID to enter in your message.
If using bitcoin-qt:
Click file, then sign message:
In line 1 - enter the bitcoin address you sent the payment from
In line 2 - construct a detailed message based of the example shown below. Best to use details about the payment sent including transaction number etc.
Then click the button labeled sign message (3)
After you click that button, you will get this message:
Now, PM all three of these fields to Canary:

Address you sent payment from that you used in line 1 (this is the address recorded for your transaction on the list of orders.)
-message entered in line 2 (shipping info with phone
if required)
-signature that bitcoin-qt populated.
On my end, I use these 3 pieces of information in the verify tab and it will confirm that all the information is correct.
Do not make any of the info public. Make sure everything is copy and pasted verbatim.
