Because ethereum can build a simple platform that has a lot of usefulness compared to another platform which used various and thousands of codes but they have not any usefulness compared to the ethereum so far ethereum will always become the leader on this field.

IMHO. Apart from the popularity, create a token and or smart contract on ETH platform is easier+simpler (just copy & paste source code in another token on ETH platform)+low fee than create on NEO, XLM, nor EOS platform.
