Using the current script code I have, I may be able to create a block by block data collector. But because the block time is variable I need a way to poll the api at the right interval, then only load the page data when a new block is created. If I could tie this in with RPC calls then I've essentially got a block rewarder that can run 24/7.

that wouldn't be reliable info as behind any wallet are multiple addresses with your coins split among them and you don't have any way to see which adresses belong to the same wallet.

but I guess you could extract some indicative statistics on how the coin got distributed overall with the average transaction amount and avg amount per adresses

Forget the prices right now. They are meaningless with such small volume. They mean nothing, and do not reflect value. Now is a good time for the coin to be further distributed.
