IMO 3 hours are too fast for documents check to be done, usually it takes 2 or 3 business days.
If they working on it quickly then it might can be done within 24 hours

Casinos ran with customers money countless times, look at fortunejack, thousand whores behind, and they have such rigorous ToS they cancel people's winnings, had half forum pissed at them and ended up refunding buyers deposit and keept the over 4 btc profit.
There's too many examples of exchanges, casinos and people that just ran with people's coins.

What wonders me is why a KYC check is done here?

Like some said if you are winning big it is a custom that the casino will ask for your KYC just in case if you are playing from a country that they think is banned they can get away without paying them citing TOS and they do not mind keeping the amount if they loose, so that is basically with the KYC and we are playing with bitcoin and the idea of they are going to transfer huge amount does not mean that it is mandatory to verify your details under any law that i know off as we do not have a law in many countries regarding cryptocurrency.
