Yes, this has happened to me several times. Most of the time, the problem is not the fear of losing capital but the lost profit that I had made. Everyone is not like you, that's the difference why we are called humans, everyone has they own way of doing things, what you might think its right won't be right for others and if every gamblers will act like you and be satisfied the way you are, I don't think there will be much problem when gambling,  as it won't have to affect them negatively and won't also have difficult time controlling their minds and sometimes, its difficult for them to really accept what gambling is made of, that's why their emotions always over power their strength.

Yeah, the feeling like, "I should have won more" always gets me in gambling. Not only in gambling, but in trading too. I am a greedy person. I may win, but the amount of winnings that I could have won by stopping at the right time sometimes makes me overthink. My mind treats that potential missed profit as a loss.

It's difficult for me to think simply like:
Is my money now bigger than the initial capital? If yes, then it's not a problem and I should not overthink it.

You hit the nail on the head with that example of a child or person (doesn't have to be a child) being promised a chocolate but only to get there to see that the shop has closed, you made me remember so many times I've felt this disappointment after reach a shop to buy my favorite drink only to see that they've closed before I reached there, happened to me even yesterday night 😂

That should always be how it's supposed to be because in gambling nobody is promising you a win, that's the reason why if you are lucky enough to get it just take it and avoid gambling for a while.
