While I do enjoy using these technologies, we need versions that are far better than what we have today and that applies to writing code as well. But for that to happen, a programmer would need to define the task with such precision that it would essentially become a form of programming in itself after all, how else could one describe, in minute detail, all the nuances we’d want to see in the final result?

Yes, I think you’re right before the advent of AI, code could simply contain human errors, which are natural for us. Introducing AI into the process could create new issues, but I assume that risk managers at these companies earn their keep for a reason they likely warned management about this long ago. The real question is how management responded if they didn’t take the situation seriously, then they are at greater risk than other gambling platforms. I understand what you mean when you mention that AI needs very accurate instructions in order to deliver what we want, that is why there are people who have been suggesting that in the future we will have professional prompters, instead of professional programmers or coders.
Still, for someone to prompt something useful for casinos, banks and exchanges, that person is supposed to be able to review whatever the AI generates. Ai has made it possible for hackers to up their game, this is the reason why the issue with different casinos casino losing money has been coming up multiple times. Although some casinos have been hacked in the past without the use of Ai but it is not really as common now more than how it was in the past. If they haven't started using Ai to protect their site from getting exploited by hackers it might be difficult for them to trace the people that hacked the system.

I'm not really sure if AI can be the most effective solution for improving a platform's security system, but it might help to some extent.
