or however many days worth of that 10,000% it takes till you find a block  I can't see 25 coins making it to the 16 day limit.

and what happens if a batch of coins reach's past 16 days? does it start over? or does it keep the 16 days worth of weight until it finds a block?

You are right, if it takes longer to get a stake than 16 days, then the coins will have to be moved and the counter will reset. I am not sure if it will carry over.
