is there anything I need to do to get the staking to work on gui less wallet(Linux).   Such as add stake=1 into the conf file after a bit..

staking=1 in your litedoge.conf file
then launch the wallet.
the default is 1 anyway
no need to put it
you only need to put staking=0 if you don't want to stake. (for example if you are a pool or a service provider for ldoge)

each block you find you get the complete reward your self since you found that block.
proof of stake is a form of mining just like proof of work.

http://ldoge.manhattanmine.com payout is set at 500 and it's not paying. Can you restart the cron job?
