Possible reasons for this? Someone trying to scam? Someone using multiples addresses?

Most likely the formatting of the message. There's a space at the end of the first line and the linefeed is often troublesome when copying from the forum. That's why signed messages should always be inside a [ code] box as the forum software will not add extra hidden formatting characters to them. Or it could be they just used the wrong address.

If I ever get hacked, I'm sure I will make it work.
Worst case scenario I can send some coins from that address thus proving I control it.

Use Electrum as the gui for your ledger, go to your list of public addresses, right click on the one you want to use for the signature, click "sign message".  Too easy.

I suggest you to generate a Legacy address with your Ledger and sign a message with this address.
Just see that you used a legacy address.
I used a Ledger Nano S without any issue. Maybe try a message on only one line and use a code box to publish you signature here
