I'm eating Bitcoin pizza day leftovers. Why does pizza always taste better the next day?
There can be many reasons for the pizza to taste better the next day, such as: If you eat hot pizza while making the pizza, the taste changes a lot. As I do, many times I put the food in the fridge and it turns out to be very cold and watery and it tastes great. Thus, if you keep the leftover pizza in the fridge after eating it and eat it the next day, the taste will increase because the pizza has a lot of ingredients in it, they will get more time in the fridge to mix and blend nicely. So it is very pleasant to eat. But everyone likes to eat the way they are used to eating. I also love to eat food the fridge.
I'm not a fan of watery; usually I shake off any condensation from the lid of a refrigerated container and I haven't eaten cold pizza (much) since I was at school. It takes like 10 minutes in a toaster oven but it makes a world of difference. Cold beer - yes please!
The acid in the tomato sauce marinates both the cheese and the crust .
Same with tomato sauce that sits in the pot from sunday dinner.

Now this is a good explanation. I was thinking of the other foods that usually taste better the next day and most of my favourites include tomatoes in the recipe:
lasagne, chili con carne (although it does taste pretty darn good after a day in the slow cooker), bolognese sauce... even Libby's (Heinz now I guess) deep-browned beans in tomato sauce
You just gave me inspiration for my next Sunday haiku lol. It's true, depending on where you get the pizza or how you make the pizza, it can definitely taste better the day after. Especially if you warm it up in the oven again and it becomes super charred and crispy mmmm. Sometimes eating it cold is dope too!
