What is the hard cap in ETH? If there is one..

no "hard" cap.

If there is no hard cap, but you've set a price and you're only selling a set amount, how do you plan to keep those values?  By my count, the cap would be just over 180k ETH.

Yes, that would be ideal that's why we've set a soft cap.

if we hit our minimum of $250K, our coin will still launch. As that is the minimum amount we need to meet a portion of our targeted milestones to reach revenue.

I think it is better for the team to have maximum cap, $250k is a very low amount and I believe this would be reached quick but the funding will stall after that because nobody wants to be involved in project that is over valued already. Put a maximum cap on this will help your team alot

Good luck with your project, I see you have some good backers. I have some questions:

1) how are you going to convince hospitals / doctors etc. to use your service?

2) what advantage does the blockchain have over distributed systems which are in use now?

3) will you be storing all patient data on the blockchain? If yes, how are you going to manage size issues?
