It was originally 10 coins that Wintermute traded. Three more were added in November of 2017 bringing the total number up to 13. I will have to ask people on the trading side why they decided on that starting number. But as a (little bit of a trader) I can answer why not 100. Cryptos move, not exactly in lockstep but largely in sync with one another so you add no benefit nor do you diminish risk to trade a huge variety of tokens. Smaller tokens have lower capitalisation which increases the liklihood that you will end up not being able to execute a trade without moving the market.
There are also issues of counterparty risk. I believe the team looks for 3 viable exchanges to place orders through for each token we trade. For us to use an exchange for trading, they must pass our internal controls for counterparty risk. You can listen to

Though we have no control over people that wish to buy the token from other sources we do not accept token holders if they are resident in the United States through the
