Yes, you can hold just 1 FUN tokens by buying them through the Freebitcoin website. Regarding about the 2,500 tokens, that's the minimum amount to receive the Premium Membership Program for FUN token hodlers.

I can understand you don't want to be paid with Fun tokens as you said above but you've never bought any of them either?
If you never claim any bonus with your Reward Points it could be a good way to get bonuses without having to be active (if you're a freebitcoin player ofc)
