The problem I can see is that with Doge coin everyone regraded it as a joke at the start, so only a few people actually mined it keeping difficulty low before it exploded in popularity..

with the next batch of meme coins everyone is going to jump on at once making this a different ball game..a more unprofitable ball game

With the advantage of hindsight, it could retarget based on shorter block intervals, perhaps with some limits in place. Also, in anticipation of a massive amount of hash power at launch, diff could start higher... but that would require an actual programmer, not just a copy/paste coin.
