That being said, some days ago I tried to find if Stake had their own Android app or APK posted on their webpage, I could not find it, weirdly enough.
I would have guessed a casino as big as Stake had an official APK.

Big casinos have no official APK shows that their main website and mobile version are more than enough to satisfy their users.
For more than 10 years of being gamblers, I have never used any gambling application that I need to install in my phone.
I have tried few in the past when I was still in fiat gambling (poker), but still the experience, the features, and almost everything is better to be done in the main website or in the mobile version compared to apk.
Why do I need to install an application in my phone while I can access it through mobile browser.

It is not big deal if one knows what is doing and only downloading APKs from official sources (provided by the casino itself). The fact APKs can also be signed helps to check the integrity of the package before installing it.

That's true. Just because an app is hosted on Google play or app store doesn't mean it's safe (especially for Google play). Many fake and malicious apps exist there, so better be careful. If you want to remain safe then download the app from he official website and verify its signature, if it exists. This applies to all kind of apps.
Personally, I believe using apps apps is more convenient and more secure than browsers.
Casinos should have their wn apps and encourage their customers to use them because when using a browser, a player may be tempted to visit other casinos unlike when using an app.

Yes, reasonable enough to take consideration when choosing a casino. Any casino website that is not mobile responsive only means that they don't care their users and doesn't have the budget to do it. If they can't do at least for this simple yet important feature how much more others, like its security, UX, etc.

They are probably new, Desktop and mobile browser compatibility is I believe the most basic thing that a browser based casino should have. Compatibility should be there always and I agree that if they haven't meet at least the basic, What more about the security of the casino which is more important. I think the security on 'regusterint' an application in playstore isn't that hard which makes it accessible to bad people in different industries involving payments and transactions. AI have a colleague which is a programmer and he managed to list his application in the said platform and when I asked him, he said he just complied with certain requirements, which gave me this idea. But if proper background checking will be done, wherein casinos may post their affiliation with the apps in the market, I think a player would be able to find a legitimate gambling platform in his/her preference. But I suggest local gambling sites still which can be played in browsers. I think it would give you more assurance that you are playing "live" than recorded stuffs wherein odds won't be on your end.

But I know that most casinos have their website responsive to mobile users too. They just can't miss on how many are always on the go and while waiting on sub stations, waiting for the bus or just chilling on a cafe.

Adapted to the foot for a mobile phone, the application first of all has a much larger scale of coverage for game users.  You can play anywhere at all, almost in a flying plane, and where a computer or laptop can not be used simply.  But the problem is of course all the same in a rather small screen ?. 
And this makes special demands on the game control buttons and the ability to place them conveniently for the game.  Indeed, the devs of such applications need to show great ingenuity so that the game on the mobile phone would be both beautiful and functional.  Therefore, few have made such excellent games, and many applications that do not work well. 

But, I think everything is going to what many such cool applications will do in the end

Yes, I definitely agree.

This is one more moment why gambling using the app more comfortable than mobile browser. Even if devs optimize site for mobile browser - the casino website usually contains more information than the app and it is designed for the large page. On the small screen it can be problem to see it good and to click control buttons correct.

I think that if you are starting from scratch is much better to build a website, because it will allow you lean development as there are more tools and you will be able to explore the universe of your market and types of clients more freely. Also, if you look for a standard software, in Android or other platforms, you will not excel in the platform as it will be the same as any other.

I'm surprised to hear this, maybe from your country side not mine.
There are alot of crypto casino android apps and they are very easy and compatible to use. But there is no actual need of wanting to use an app when the browser option is more also easier and reduces the risk of getting addicted to gambling from simply just tapping on an app.
And there are a whole lots of casino apps on Google play store and you can go try them out but I'm not guaranting their safety for you, and I was even more surprised when you stated that you don't access those sites from your phone. I will advice you to get a new phone if you have the means to do so.
