I can see your point, hopefully it's easy to spot one because god knows who will lie and submit their AI videos in the wrong category. I've seen so many people lie on the internet about using AI that it's hard to view the tech positively. Hopefully, we don't have to struggle trying to figure out which one is AI or not in the future. I guess you can ask for the recording of the video-making process if it's for a competition like this. CMIIW.

So far, it's not too hard to find AI-generated videos. Google's VEO 3 started generating almost realistic videos, yet it is not impossible to detect AI-generated videos. I have already seen some videos on the internet, people are sharing saying Iran destroyed a skyscraper but I know that was clearly AI generated shit. Unfortunately, a lot of people were sharing those videos.

As for any kind of contest, I think the organizer should not allow people to submit AI-generated content. If they do, it should be in a different category so others can do the same and compete with each other. That is my personal opinion though.
