Any idea on how coins disappear when being transferred from a pool to a wallet address? This is a first for me.

copied wallet.dat from recycle bin, loaded new wallet and file on another pc

Then you got the wrong wallet, please download the new one and delete UniversityCoin folder on your %appdata% folder before you open the new wallet.(Instruction can be found on OP)
